Big Mac Sauce is a special sauce used by the fast-food chain McDonald's for its famous Big Mac burger. It's a variation of the classic American "Thousand Island" sauce and contains ingredients such as mayonnaise, mustard, pickles, garlic, and onions. However, the exact recipe is a closely guarded McDonald's secret.
The sauce gives the Big Mac its distinctive taste and is an important part of the burger.
Despite many attempts to recreate the sauce at home, McDonald's claims that the original Big Mac sauce is unique and cannot be reproduced exactly.
TIP:
Instead of buying ready-made cucumber relish, you can quickly make it yourself. Simply finely chop a few pickled gherkins and stir them into the sauce.

Ingredients
Serves 4-8

Big Mac Sauce
240 g mayonnaise
60 g pickle relish
1.5 tbsp mustard, or mild mustard
1 tsp white wine vinegar
1/2 tsp paprika
1 tsp ketchup
1 onion
1/2 small garlic clove
1 tsp sugar
Preparation in 4 steps
1. Prepare the onion and garlic
Peel and finely chop the onion and garlic, and place them in a bowl. Pour hot water over them, let them stand for 4 minutes, then strain through a sieve.
2. Combine the ingredients
In a bowl, thoroughly mix the drained onions and garlic with the sugar.
3. Heat the sauce
Pour the mixture into a small saucepan along with the ketchup, vinegar, and seasonings. Heat gently over low heat on the stovetop.
4. Finish and store
Remove the pan from the heat, stir in the remaining ingredients, and then refrigerate the finished sauce until ready to serve.
💡 Save calories –
Total savings potential: 👉 Up to 100–130 kcal per 50g serving if you:
Replace half of the mayonnaise with low-fat yogurt or skyr (e.g., 120g mayo + 120g yogurt)
Use light mayonnaise (e.g., 30% fat) instead of traditional full-fat mayo
Omit the sugar or replace it with a small amount of erythritol/sweetener
Switch the ketchup to a reduced-sugar version
👉 This keeps the sauce very similar in taste – but significantly reduces the fat content without sacrificing creaminess.
