For the Chili Cheese Dip
6 slices of Chester sandwich cheese
300 ml milk
40 g butter
2 tsp flour
75 g jalapeños (from a jar)
1 tsp smoked paprika powder
1/2 tsp chili powder
1/2 tsp chipotle powder
Preparation in 6 steps
Melt the butter:
Melt the butter in a small saucepan over medium heat.
Make the roux:
Stir in the flour and cook for 1-2 minutes, stirring constantly, until the mixture foams slightly but does not brown.
Stir in the milk:
Slowly add the milk, whisking vigorously until a smooth sauce forms. Bring to a boil briefly, then reduce the heat.
Melt the cheese:
Grow the Cheshire cheese slices in small pieces into the hot sauce and stir until completely melted.
Season & finish:
Stir in the chopped jalapeños, smoked paprika, chili powder, and chipotle powder. Season with salt (optional).
Serve:
Serve the dip hot—perfect with nachos, fries, or as a burger topping.
Tip: If the dip gets too thick, simply thin it with a little milk or jalapeño juice from the jar.
