Crispy Fish Burger

For the burger

  • 2 burger buns

  • 300g cod

  • 150g panko breadcrumbs (for marinating)

  • 50g flour (for marinating)

  • 1 egg (for marinating)

  • 2 slices of cheddar cheese

  • 1 onion

  • 2 Lollo Bianco lettuce leaves

  • 1 tbsp salt

  • 2 L oil for frying

For the remoulade sauce

  • 50g Greek yogurt

  • 50g mayonnaise

  • 20g capers

  • 2 gherkins

  • 1/4 bunch of chives

  • 1/4 bunch of parsley

  • 1/4 bunch of dill

  • 1 tsp mustard

  • 2 tsp sugar

  • 1 tbsp olive oil

  • Salt & pepper

7-step preparation

1. Prepare the remoulade sauce

Finely chop the capers and gherkins. Wash the herbs, shake dry, and finely chop them as well. Mix Greek yogurt and mayonnaise in a bowl. Stir in mustard, olive oil, sugar, salt, and pepper. Finally, add the chopped ingredients and mix thoroughly. Chill the finished sauce.

2. Prepare the onions

Peel the onion and slice it into thick rings. Set aside.

3. Bread the fish

Prepare three bowls: – 1 with flour, – 1 with beaten egg (whipped until frothy), – 1 with panko breadcrumbs and a little salt. Pat the cod dry, first coat it in flour, then dip it in the egg, drain well, and coat thoroughly in the panko until all sides are well coated.

4. Heat the oil

Heat enough oil in a deep pot to approximately 175–180°C.

Caution: Never leave the fish unattended and ensure that no water gets into the hot oil!

5. Fry the fish

Carefully add the breaded cod to the hot oil and fry for 4–7 minutes until golden brown and crispy. Drain on paper towels and immediately top with a slice of cheese to melt slightly.

6. Toast the buns

Cut the burger buns in half, brush the cut sides with butter, and toast cut-side down in a pan for about 30 seconds until lightly browned.

7. Assemble the burgers

Brush the toasted bun halves with the remoulade sauce. Then top the burger with lettuce leaves, the fried cod with cheese, and the onion rings. Place the top bun half on top and serve immediately.

💡 Save calories –

Total savings potential: 👉 Up to 200–300 kcal per serving if you:

  • Reduce panko to 75g – some of it usually goes unused anyway

  • Replace frying oil with baking or air fryer – saves a lot of fat

  • Use only 1 slice of cheese instead of 2 or choose a light cheese

  • Halve the mayonnaise in the sauce or replace it with low-fat yogurt

  • Omit olive oil from the sauce (yogurt still makes it creamy)

  • Replace or omit sugar with calorie-free alternatives (little impact on flavor)

👉 This keeps the burger crispy, flavorful, and fresh, but significantly lighter and more balanced in calories.
