Homemade French fries are a treat you can easily prepare at home. In this guide, we'll show you how to make perfectly crispy fries with a golden brown exterior and fluffy interior using just a few ingredients and a little skill. French Fries

  • 1 kg (3-4) floury potatoes

  • 2 tbsp (white) vinegar

  • 2 tsp table salt

  • 1 liter vegetable oil

  • 1 pinch of salt for seasoning

  • A little chives

  • Vinegar – Prevents the fries from becoming soggy. A cooking time of 10 minutes is required to remove enough starch and make the fries crispy.


Tip – Freeze for extra crispiness:

After frying the fries for the first time, let them cool completely, then freeze them in a freezer bag. Fry them a second time before serving, straight from the freezer, for extra crispiness.


Preparation in 6 Steps


1. Prepare the potatoes

  • Peel the potatoes and cut them into even-sized sticks (about 1 cm thick).

  • Place them in a bowl of cold water and soak for at least 30 minutes (draws out the starch = crispier).

    Tip: If you're in a hurry, you can skip the soaking step – but they won't be quite as crispy.


2. Boil briefly in vinegar water (vinegar trick)

  • Bring a pot of water to a boil, then add 1-2 tablespoons of vinegar.

  • Simmer the drained potato sticks in the vinegar water for about 5 minutes until they are slightly soft but not overcooked.

  • The vinegar helps firm the surface = more crispiness when frying.


3. Dry

  • After soaking, drain the potatoes and pat them thoroughly dry with a clean kitchen towel or paper towel.

  • Important: The drier they are, the less likely they are to splash when frying.


4. Pre-fry

  • Preheat a pan with oil or deep fryer to 140–150°C.

  • Pre-fry the potato sticks in batches for 5–6 minutes – they should be soft, but not browned yet.

  • Remove the fries, drain on paper towels, and let them cool (at least 10–15 minutes).


5. Second Frying – for the Crunch

  • Increase the temperature to 180–190°C.

  • Fry the fries again for 2–3 minutes until golden brown and crispy.

  • Then drain again on paper towels.


6. Season & Serve

  • Sprinkle with salt and seasonings of your choice immediately after frying – while they're still hot, they'll stick better.


💡 Save calories –

Total savings potential: 👉 Up to 150–200 kcal per serving if you:


  • Fry the fries in the oven or air fryer instead of in oil

  • Use only 1–2 teaspoons of oil per serving when baking (e.g., with oil spray)

  • Leave the potato skin on (saves processing and increases fiber)

  • Use salt sparingly when seasoning – herbs (e.g., rosemary, paprika) can also add flavor


👉 Result: Crispy, golden fries – but with significantly less fat and calories.
